Tonight at "Chez Meeow"....

...zucchini-feta quiche with parmesan-provencal herbs-crust...

Hey sweeties...
yesterday was quiche-time at "Chez Meeow" - and I tried a very easy and delicious vegetarian quiche. Pat was delighted and wanted a second serving ... ^^ (and he is an abolutely carnivorous plant ;) )
so you need the following ingredients:

for the pastry:
♥ 130 g flour
♥  40 g parmesan, fine grated
♥ 1/2 tsp salt
♥ 65 g soft butter
♥ 1 Egg
♥ herbs of the provence

for the filling:
♥ 1 Zucchini (approx. 300 g)
♥ 1 clove garlic
♥ 1 package Feta 
♥ 2 eggs
♥ a handfull of sunflower seeds
♥ 40 g parmesan, fine grated
♥ 100 g sourcream
♥ some olive oil
♥ salt, pepper, herbs of the provence for seasoning

For the pastry put all ingredients together, form a ball, wrap it in clingfilm and let it rest in the fridge for 30 minutes.
In the meantime cut the zucchini in lenghtways quarters and cut up into slices. Chop the garlic in fine pieces.
 brown them in a pan in some olive oil...
and let it cool down a bit....
Then its time for the pastry - roll it out to a thin dough and put it in a tarte-pan - you dont need adding fat to the pan.
press the dough tightly into the pan and let it bake for 20 minutes at preheated oven at 170° C until the ground is browned.
Meanwhile you repare the filling... Seperate the egg yolk from the egg white. Mix the egg yolks, sour cream, sunflower seeds, the zucchini slices and the fine cubed feta, season it with salt, pepper and herbs de provence. Beat the egg white until its whipped and put it under the mixture.
Fill it into the tarte-pan and top it with parmesan...
Bake it for 20 minutes at 170° C until its golden brown...
serve it with green salad...
